white chicken chilis are not made equal. let me tell you guys, this white chicken chili seriously takes the cake for “most bang for your buck” and for your time.

y’all, with only FOUR ingredients and with stellar flavor, you seriously can't go wrong with this recipe.

y’all, mother-in-laws. aren’t you so grateful for them?!
i know that line, “y’all, mother-in-laws.” might strike a different chord for many of you. our culture typically says that line with an eye-roll + a large dose of sarcasm.
but that’s not my tone, friends. if anything, i’m sure that’ll be the tone of my future sons + daughters-in-law, if ever i’m a MIL.

anyway, my mother-in-law is the original finder of this recipe for our family. it is her famous soup to pass, and rightfully so.

i can remember having dinners at Nate’s parents frequently throughout my college years. how grateful i was (and am) for their hospitality + grace extended to me then, and now.
fall is such a nostalgic time of year, isn’t it?
i can remember coming in the back door on a chilly, drizzly, fall night and being greeted with warmth.
a warm wave of cozy air drifted from the kitchen into the mudroom where nate + i stood quickly taking off our boots + jackets.
familiar + comforting smells ushered us in; scents of a woodburner gently warming the house, of corn bread baking + inviting our tummies to growl (since we were running on a bowl of cereal 8 hours ago + a few cups of coffee), and fall candles dancing through the living room.
warm smiles, hugs, + kisses met us there. curious hearts + sincere questions about our days + weeks welcomed us in around the table.
all of the rushing around our day, going to classes + meetings + events, came to a halt once we walked into that back door + into that warmth. we were welcomed in, as we were, to love + laughter + gentleness + care; we were met with an invitation into warmth.
and in this space our hearts’ cups were filled up.

and so were our bowls! ha, with white chicken chili.


| 1 - 6 hours (slow cooker option) | 8-12 servings |

  • 1 1/2 LBS chicken breast, cooked and cubed/shredded

  • 1 jar (~24 oz) medium (or spiciness of your preference) salsa

  • 4 cans (~15 oz each) great northern white beans or cannellini beans

  • 8 oz pepper jack cheese, PLUS 4 - 8 oz more for serving

Slow cooker Instructions

1) Place uncooked chicken breasts + salsa in slow cooker. Cook on low for 3 hours, or until chicken is completely cooked through.

2) Once chicken is cooked through, use a fork to shred chicken in crock pot.

3) Add the remaining ingredients; beans + 8oz pepper jack cheese.

4) Cook on low another 1-2 hours until cheese is melted + soup is warmed through

5) Enjoy!


Stove top Instructions

1) In large soup pot, add all ingredients and simmer for 30 - 45 minutes.

2) Enjoy!


Cornbread or johnny cake + a traditional vegetable salad go wonderfully with this soup!
